Citric acid anhydrous
The molecular formula is C6H8O7, which is a colorless and semitransparent crystal or whit particle or white crystal powder that contains a molecular of water. It is odorless, dissolves in water, alcohol and diethyl ether, and has strong acid flavor. Monohydrate citric acid is produced under proper temperature when it is crystallized. Aqueous solution appears acidic. It is slight weathering with dry air and deliquescent with wet air. It is mainly used in food and beverage as acid agent, acidity regulator, and condiment, aseptic and preservative. Potassium Citrate is also called tripotassium citrate anhydrous. It’s one kind of Sodium Citrate.Molecular formula is C6H5K307, molecular weight is 306.39500. It is a white, slight hygroscopic, crystal powder, which is odorless and normal saline flavor. It dissolves in water and glycerinum and does not dissolve in alcohol. It has salty and cold taste. Sodium citrate
It is one kind of organic compound. It is white or colorless crystal. It is odourless and has cold and salty taste. It is stable when it’s normal temperature.it tends to be dissolvable when it’s wet air. It is weathering when it’s heat air. It lose crystal water when it’s heated to 150℃. it is dissolves in water and glycerinum. It does not dissolve in alcohol or organic solvent.It is deliquescent in wet environment. It is weathering in heat air. And its pH value of solution is 8.
Sodium citrate is used in food and beverage as acidity regulator, flavor agent and stabilizer. It is used in pharmaceutical industry as dicumarol, expectorant and diuretics. In detergent industry, it can replace sodium tripolyphosphate as promoter of non-toxic detergent. Also it is used in brewing, injection, photographic chemicals and electroplate.

Calcium citrate
Calcium Citrate does not easily dissolve in water (0.1g/100mL,25℃). It’s slight hygroscopic. It loses crystal water when it’s heated to 100℃. Special rule is not for ADI value (FAO/WHO, 1994). Calcium citrate can be used as calcium reinforcing agent and performs better than inorganic calcium. In China,it can be added in cereal and itsproducts.  The amount in milk drinks is 8-16g/kg and other drinks are 1.8-3.6g/kg. Citric acid is one kind of acid complexing agent and can react with calcium oxalate in ureteral calculus, thus soluble calcium citrate can make calculus disappear and promote lipolysis and keep acid-base balance of human body.
